Hazelnut And Cranberry Scones
- 2 1/16 cups flour
- 6 2/3 tablespoons caster sugar
- 6 1/3 tablespoons butter cold
- 2 teaspoons baking powder
- salt
- 1 egg
- 1/2 cup buttermilk or whole milk
- 9/16 cup ground hazelnuts
- 3/4 cup dried cranberries
- Preheat oven to 200 degrees Celsius.
- In a bowl, pour the flour, yeast, sugar, and a pinch of salt. Mix.
- Add the butter, cut into small pieces.
- Mix with your fingertips to obtain a paste which resembles coarse sand.
- Add egg and milk gradually, mix to obtain a homogeneous dough, then add the dried fruits.
- Spread the dough on a lightly floured surface to a thickness of 2 to 2.5 centimeters.
- Cut your scones with a biscuit cutter, and place them on a baking sheet lined with parchment paper.
- Brush the scones with a little milk, and bake for 15 to 20 minutes until properly inflated and very lightly browned.
- Optionally, sprinkle seeds or oatmeal on top of the scones before baking.
