Dalma (Armenian Stuffed Vegetables)
- 6 summer squash
- 6 medium Italian peppers
- 6 medium tomatoes
- 1 lb. ground beef or 1/2 lb. ground lamb or 1/2 lb. ground beef
- 1/2 c. white river rice
- 1/2 c. chopped onions
- 1/2 c. parsley
- 1 tsp. dry dill
- 1 c. canned tomatoes
- 1 c. hot water
- 1 1/2 tsp. salt
- 1/2 tsp. pepper
- Cut squash in half and remove pulp.
- Cut near the top of the peppers and remove the seeds.
- Save the tops.
- Cut near the top of the tomatoes, not all the way off.
- Scoop the pulp from tomatoes and reserve.
- Mix meat with uncooked rice, onions, parsley, dill, salt, pepper and chopped pulp from 3 tomatoes and 3 squash.
- Stuff vegetables loosely (allowing for expansion).
- Replace pepper tops. Arrange filled vegetables in a 2-quart casserole dish, with cover.
- Put tomatoes on top of peppers and squash.
