Red Hot Chili
- 3 lb. chuck roast, hand cut into bite size pieces
- 1 lb. Boston Butt pork roast, coarsely ground
- 1 lb. ground beef
- 1 1/2 qt. tomatoes
- 1 1/2 large onions
- 1 (15 oz.) can tomato sauce
- 5 chili peppers, chopped
- 1 Tbsp. black pepper
- 2 Tbsp. salt
- 1 Tbsp. paprika
- 1 Tbsp. oregano
- 1 tsp. cumin, ground
- 1/4 tsp. cayenne pepper
- 1/4 c. chili powder
- 1/2 tsp. powdered garlic
- 1 Tbsp. flour
- 2 Tbsp. corn maize
- 1/2 c. water
- 4 cans Mexican chili beans, drained
- Brown
- the
- meat and saute the onions.
- Add this to the tomatoes in a large pot.
- Cook for 30 minutes.
- Add all spices and cook
- for
- 1 1/2 hours.
- Mix the flour and maize into the water. Stir
- slowly until the chili mixture thickens.
- Simmer slowly for 1/2 hour.
- Stir frequently.
