Tasty Dhal
- orange lentils or 200g skinned and split yellow
- 900 milliliters water
- 1 inch fresh ginger peeled and cut into thin strips
- 2 cloves garlic peeled and cut into five large pieces
- 3 green chillies left whole, optional
- 3/4 teaspoon haldi turmeric powder
- 1/2 can tomatoes tinned
- salt to taste
- 1 1/2 tablespoons butter oil
- 1 teaspoon ground cumin
- coriander powder 1/2 tsp dhaniya
- 1/2 teaspoon Garam Masala
- 1 Place the lentils, water, ginger, garlic, tumeric and chillies in a pan, bring to a boil, then simmer over a moderate heat for 10 minutes.
- 2 Stir in the tomatoes and cook for a further 20 minutes.
- 3 Add salt and cook for another 10 minutes or so, until the lentils have started to break down and the curry comes together.
- 4 Meanwhile, heat the butter or oil in a small pan. Add the cumin, coriander and garam masala and fry for 2 mins, stirring frequently.
- 5 Pour the mixture into the pan of lentils. Throw in some fresh coriander.
- 6 Cook for another minute and serve on a bed of Basmati rice with plain yoghurt and an ice cold beer!
