Nava Atlas'S Sweet Potato Tzimmes
- 3 sweet potatoes large, cooked/microwaved, peeled, and sliced
- 3 large carrots sliced
- 1 pear large, peeled, cored, and sliced
- 1 red onion large, quartered and thinly sliced
- 2 tablespoons olive oil or other vegetable oil
- 1/2 cup prunes chopped dried, or dates
- 1/4 cup dried apricots chopped
- 2/3 cup orange juice preferably fresh
- 1 1/2 teaspoons cinnamon
- 2 teaspoons ginger minced fresh, or jarred
- 1 teaspoon salt
- 1/4 teaspoon nutmeg or 1/2 tsp if freshly grated
- 1/2 cup chopped walnuts finely, for topping, optional
- Preheat oven to 350 degrees
- Heat the oil in a large skillet. Once hot, saute the onion until transluscent
- Add carrots to skillet and continue to saute until the onion is golden
- Combine with remaining ingredients (except the walnuts) in a mixing bowl and stir until thoroughly mixed. Don't worry if the potato slices break apart.
- Oil a shallow 2-quart baking dish.
- Pour sweet potato mixture into baking dish and pat in evenly. If using walnuts, sprinkle them over the top.
- Bake for 45 minutes, or until the top begins to turn slightly crusty. Serve hot.
