Lamb Kebabs And Wraps
- 1 pound boneless lamb cut from leg, cut into 3/4 inch cubes
- 1 lemon peel finely grated and lemon juiced
- 1 teaspoon ground coriander
- 1 teaspoon dried oregano
- 1 clove garlic crushed
- 8 bamboo soaked, skewers
- 6 ounces haloumi cheese thinly sliced
- 1 head romaine lettuce shredded
- 2 vine ripened tomatoes sliced
- olive oil to drizzle
- falafel Prepared, to serve
- 1 tzatziki tub, 7 oz
- lemon wedges to serve
- pita bread to serve
- Toss lamb with lemon peel and juice, coriander, oregano and garlic in a large bowl. Season to taste. Refrigerate 30 mins to marinate. Thread lamb onto skewers.
- Heat a grill pan on medium heat or preheat the grill to medium. Grill skewers 3-4 mins each side, until cooked to desired doneness.
- Grill haloumi 30 seconds each side.
- Arrange lettuce and tomatoes on a platter; drizzle with oil. Arrange lamb, haloumi and falafel on another platter with tzatziki and lemon wedges.
- Serve with pita bread for guests to make their own wraps.
