Shepherd'S Pie
- 1 lb. ground beef
- 1 carrot, chopped
- 1/2 tsp. pepper
- 1/3 c. frozen corn
- 2 c. hot mashed potatoes
- 1/2 c. chopped onion
- 2 celery stalks
- 1 tsp. garlic
- 1 can cream of mushroom soup
- 2 Tbsp. margarine
- 1/2 tsp. salt
- 1/4 tsp. parsley
- 1/2 c. grated Cheddar cheese
- Preheat oven to 350u0b0. Saut onions, celery, carrots and garlic in margarine. Brown ground beef and drain. Add to onion mixture. Add salt, pepper, parsley and corn. Combine mixture with mushroom soup and stir on medium heat. Simmer 20 minutes. Pour mixture into 9 x 13-inch baking dish and cover with mashed potatoes. Top with cheese. Bake in oven for 30 to 45 minutes until bubbly. Let cool slightly. Cut into large squares.
