Thai Beef Lettuce Cups

  1. In a 10-inch skillet, heat the oil over medium-high heat until shimmering. Add the onion and garlic. Saute until lightly golden, 1 to 2 minutes. Add the beef, using a fork to break up any large chunks (you want little pieces of ground meat). Add the cilantro, fish sauce, soy sauce (or tamari), chili pepper, and sugar. Reduce heat to medium-low. Continue cooking, stirring every couple of minutes, until the beef is completely cooked through, 7 to 9 minutes.
  2. Meanwhile, rinse the lettuce leaves and pat them dry. Arrange the leaves on a platter.
  3. Taste the cooked beef. Adjust the seasonings, adding salt and more chili pepper, if you'dnike. Spoon the beef over the lettuce leaves. Garnish with lime wedges and fresh mint.
