Beef Patties With Bacon And Mushrooms
- 1 pound ground beef
- 2 onions peeled and finely chopped
- 1 egg beaten
- 2 ounces cheddar grated
- 2 tablespoons olive oil
- 3 ounces bacon lardons
- 5 ounces button mushrooms roughly chopped
- 3 sprigs thyme leaves picked and roughly chopped
- 3 tablespoons breadcrumbs
- potato wedges to serve
- salad tomato, to serve
- Place the ground beef in a bowl with the onions, egg and cheese. Stir to mix, then knead to combine thoroughly. Shape into 8 patties.
- Heat 1 tbsp oil in a pan, fry the bacon lardons and mushrooms for 3 mins. Remove from the heat and stir in the thyme leaves and breadcrumbs. Set aside.
- Preheat the oven to 325u0b0F. Heat the remaining oil in a frying pan, and fry the patties for 3-4 mins each side (you may need to do this batches).
- Place the patties on a baking tray lined with parchment paper, top with the bacon and mushroom mixture. Bake for 5 mins. Serve with potato wedges and a tomato salad, if liked.
