Jollof Rice(West Africa)

  1. Boil
  2. the cubed meats about 1/2 hour. Remove from broth and drain. Brown in cooking oil. Remove from oil. Slice onions and tomatoes
  3. and cook in the oil. Add 1 can tomato puree. Add black and red peppers and
  4. thyme.
  5. Add meats to this sauce and simmer for 1/2 hour. Cook rice, salt and liquid as directed on package, watching that it
  6. does

  8. scorch.
  9. Cookthe peas. After rice is cooked, gently
  10. fold
  11. the
  12. sauce and cooked peas into
  13. it and serve

  16. greenteans,treen peppers or even French fried
  17. potatoes
