Chicken Schnitzel Strips
- 1 1/4 pounds chicken breast
- 1 cup dried breadcrumbs
- 1/2 cup grated Parmesan
- seasoned flour to dust
- 2 large eggs lightly beaten
- 1 tablespoon unsalted butter
- 2 tablespoons olive oil
- gherkins
- lemon wedges
- Cut each chicken breast into two thin halves by slicing horizontally through the center. Using a rolling pin, flatten each piece slightly between two sheets of plastic wrap, then cut diagonally into 2 inch wide strips.
- Combine the breadcrumbs and parmesan in a shallow bowl. Sift the seasoned flour into another bowl, then the beaten eggs into a third bowl. Toss the chicken pieces in the seasoned flour, shaking off any excess. Dip each piece in egg and coat thoroughly with the breadcrumb mixture.
- In a large frying pan, heat the butter and half the oil over a medium-high heat. Fry the chicken for 4 mins, turning and adding the remaining oil as necessary, until golden on both sides. Remove from the pan and cool. Serve with lemon wedges and gherkins.
