Cauliflower Crispy Balls
- 1 cauliflower
- 1 cup rice Basmati
- 1/2 teaspoon turmeric
- 3 tablespoons olive oil
- 1/2 cup crumbs to coat, plus extra for bullets
- 1/2 cup grated cheese Emmentaler or another
- 2 eggs
- 1 tablespoon parsley chopped
- 2 carrots finely grated
- 1 onion finely chopped
- 2 pods garlic finely chopped
- 1 tablespoon seasoning chicken, or Vegeta without glutamate, or similar substances
- 1 pinch white pepper
- 1/2 teaspoon cayenne pepper
- Wash the cauliflower, cut into florets, steam and mixed by a hand blender into puree
- Meanwhile, cook the washed rice in 2 cups of water with a tablespoon of oil and turmeric, which gives a finely yellow coloring
- Fry the onion and garlic on the oil
- Combine all ingredients and create bullets using a small spoon for ice cream and hands, then wrap bullets lightly in breadcrumbs
- Grease a baking tray with an oil (eg. olive or grape seeds ) and lay out bullets
- Bake for about 45-60 min. at 180 oC (356 oF), or try even at 200 u0b0C (392 u0b0F) until lightly browned breadcrumbs and 2-3 times move bullets on the tray to prevent burning bullets
