Scallops On Artichoke Bottoms In Tahini Sauce
- 1 bag artichoke bottoms or 1 can
- 1 pound sea scallops or either bay
- 4 ounces tahini
- 4 ounces water
- 3 ounces fresh lemon juice one large lemon
- 1 onions large, sliced
- turmeric teaspoon a or more of, optional
- black pepper
- salt
- olive oil as needed
- chopped parsley as a garnish
- 1 pound artichoke bottoms frozen, or can
- Boil or steam artichoke bottoms and set aside
- Heat olive oil and brown the onion slices
- Collect the onions and place into artichoke bottoms
- Sprinkle spices on scallops and sear in skillet on both sides and set aside
- Add tahini and lemon juice and add some water to smooth the sauce
- Place the sauce in the artichoke bottoms and bake 15 minutes
- Add the scallops and bake 3 minutes and serve
