Parsley Dumplings
- 12 slices white bread
- 1/2 cup flour plain
- 2/3 cup milk
- 1 chicken stock cubes
- salt
- pepper
- 2 tablespoons parsley chopped
- 60 grams butter
- 4 slices bacon
- 1 onions medium
- Remove crusts from bread, and cut bread into 1 cm cubes. You will need 250 gm of bread cubes. Place in a bowl with flour, milk, stock cube, salt, pepper and parsley; mix well.
- Dice bacon and onions. Melt butter in a frying pan and gently saute onions and bacon for 2-3 minutes. Add to bread mixture and mix well; allow to stand 10 minutes.
- Take tablespoons of mixture, roll into firm balls.
- Drop dumplings into a large pan of simmering water. Cover pan, reduce heat, simmer very gently until dumplings have doubled in size, approximately 4 minutes. Lift out of water with a slotted spoon.
