Chicken Burgers With Cranberry Sauce
- 2 skinless boneless chicken breasts medium
- 1/2 cup onion minced
- 6 tablespoons cornflakes crushed
- 1 teaspoon tarragon ground
- 4 tablespoons cranberry sauce
- 1 egg white
- salt and ground black pepper
- cooking spray
- 4 buns
- lettuce
- tomato sliced
- 4 tablespoons cranberry sauce
- goat cheese sliced
- Grind the chicken in the processor. Add to a large bowl along with the cornflakes, onion, tarragon, 4 tablespoons cranberry sauce, and the egg white. Add salt and pepper. Mix well.
- Form into burgers and fry in a hot skillet spritzed with cooking spray until well cooked on both sides.
- Slice the buns in half, fill with lettuce, slices of tomato, slices of cheese, and the hamburgers. Top with the additional cranberry sauce and serve.
