Teriyaki Salad
- 15 ounces garbanzo beans Drained And Rinsed
- 1 cup sliced mushrooms
- 1 tomato Cubed
- 1 scallion Chopped
- green bell pepper Coarsely Chopped
- 1 pound firm tofu Cut Into 1/2" Cubes
- fresh parsley Chopped
- 2 tablespoons rice vinegar
- 2 tablespoons safflower oil
- 1 tablespoon dijon mustard
- 1 teaspoon soy sauce
- 1 clove garlic Finely Minced
- ginger teaspoon Dried
- 1 teaspoon black pepper
- 2 tablespoons sesame seeds
- In salad bowl, toss together salad ingredients.
- In a small bowl, combine dressing ingredients.
- Pour over salad and toss.
- Using a slotted spoon, arrange mixture on lettuce leaves.
- Garnish with red pepper strips.
