Easy Slow Cooker Tomatillo Pork
- 4 pounds pork butt boneless, trimmed of excess fat
- 26 ounces tomatillos whole, drained and pureed with an immersion blender or blender. Can also use 2 cups of fresh tomatillos.
- 3 green onions or 1 small yellow onion, chopped
- 1/2 cup cilantro chopped
- 3 cloves garlic minced
- 2 teaspoons dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lime large
- Place pork in slow cooker. Cover the pork with all the ingredients EXCEPT the lime and optional accompaniments. Place lid on top of slow cooker and cook on high for 6 hours or low for 8 hours.
- Remove pork from slow cooker and shred into pieces with two forks. Place back in slow cooker in the sauce or on platter and squeeze juice from 1 large lime over the pork. Serve with optional accompaniments, if desired.
