Penne Pasta With Basil And Feta Cheese
- 8 ounces truRoots Ancient Grains Organic Penne
- 3 tablespoons extra virgin olive oil plus additional for drizzling
- 1 green bell pepper medium
- 1 yellow bell pepper medium
- 1 1/4 cups grape tomatoes
- 2/3 cup pitted kalamata olives
- 1 tablespoon minced garlic
- 6 ounces crumbled feta cheese
- 2 tablespoons chopped basil fresh
- sea salt
- pepper
- fresh basil sprigs for garnish
- COOK pasta in large pot salted boiling water, just until al dente, about 5 to 7 minutes. Drain.
- HEAT olive oil in large skillet over medium-high heat. Saute peppers until soft. Reduce heat to medium. Add drained pasta, tomatoes, olives, garlic and cheese, stirring frequently, until cheese begins to melt. Remove skillet from heat. Stir in basil. Season to taste with salt and pepper.
- DIVIDE pasta evenly onto 4 serving plates. Drizzle pasta with additional olive oil and garnish with basil sprigs.
