Chicken Kebabs With SautéEd Vegetables
- 1 1/4 pounds chicken breast cut into cubes
- 3 tablespoons canola oil
- paprika to taste
- 2 red bell peppers deseeded and diced
- 2/3 pound chestnut mushrooms halved
- 2 onions peeled and cut into wedges
- 2 tablespoons tomato paste
- 1/2 cup vegetable stock
- 2/3 cup creme fraiche or sour cream
- ciabatta bread to serve
- Season chicken then thread onto 4 wooden skewers. Heat oil in a large frying pan and saute chicken for 10 mins, turning. Season with black pepper and paprika. Remove from pan and keep warm.
- Add peppers, mushrooms and onions to pan and saute until softened. Season then add tomato paste. Cook for 1 min, then add stock. Bring to a boil and simmer for 8 mins. Add creme fraiche, or sour cream, if using. Arrange vegetables and kebabs on plates and serve with ciabatta.
