Delicious Banana Nut Muffins

  1. preheat oven to 350 degrees
  2. In a large mixing bowl, combine bananas, sugar and eggs. Beat together (I used my KitchenAid mixer and it was very easy but a hand mixer would work well too.
  3. Add melted butter, flour and baking soda and mix well.
  4. Mix (or stir) in buttermilk, vanilla and nuts (if desired).n* I didn't want to waste the carton of buttermilk I made, so I poured the remaining buttermilk into ice cube trays- equal to one tbs. I popped them into the freezer and used them the next time I made the muffins..... they defrost VERY quickly.nnother time, I substituted SOUR CREAM instead of the buttermilk and they were just as moist.
  5. Pour batter into muffin liners in the cupcake/muffin tins.nhe original recipe say's to bake at 35 minutes, but that was too long for my new oven. Insert toothpick in center until it comes out clean.nnJUMBO liners- 28 - 32 minutes, 10 muffinsnEGULAR liners- 28 minutes, 18 muffins.
