Danish Pudding Cake
- 1 c. margarine, softened
- 1 3/4 c. sugar
- 3 eggs
- 3 c. all-purpose flour
- 1 1/2 tsp. baking soda
- 1 tsp. salt
- 1 c. buttermilk
- 1 c. chopped pecans
- 1 c. pitted dates, chopped
- 1 Tbsp. grated orange rind
- 1 Tbsp. orange juice
- 1 1/2 tsp. grated orange rind
- 1/2 c. orange juice
- 1/2 c. sugar
- Beat butter in a large bowl at medium speed.
- Gradually add 1 3/4 cups sugar, beating well.
- Add eggs, one at a time, beating well after each.
- Combine flour, soda and salt.
- Add to creamed mixture alternately with buttermilk, beginning with flour.
- Stir in pecans and next 3 ingredients.
- Pour batter into a greased and floured 10-inch tube pan.
- Bake at 350u0b0 for about 1 hour (do not remove cake from pan).
