Sugar Free Coffee Cake

  1. Cream the butter until fluffy and light.
  2. Blend eggs into the butter mixture, one at a time.
  3. Whisk together flour, baking soda and baking powder in a bowl.
  4. Sift the dry mixture into the butter mixture, alternating with the water (1/2 cup at a time). Add the vanilla.
  5. Fold grated carrots, pineapple, raisins, chopped nuts and coconut into the mixture
  6. Spread batter evenly in a 9x13 in pan.
  7. Bake at 350 degrees for 20-25 minutes or until knife comes out clean.
