Western Potato Pie
- 1 Tbsp. plus 1 tsp. vegetable oil
- 6 oz. pared, cooked potato, diced
- 1/2 c. diced green bell pepper
- 1/2 c. chopped onion
- 4 eggs
- 3/4 c. buttermilk
- 1/4 tsp. salt
- 1/8 tsp. white pepper
- 1/4 lb. Swiss or Muenster cheese, shredded
- 1 medium tomato, sliced
- 1 Tbsp. grated Parmesan cheese
- 1 c. sugar
- 1 c. milk
- 1 c. plain flour
- 1 c. oil
- 1/2 c. milk
- 3 eggs
- 1 tsp. vanilla
- 2 c. plain flour
- 1 c. sugar
- 1/2 tsp. baking soda
- 1 1/2 tsp. baking powder
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 1 large box French vanilla instant pudding
- 1 c. chopped nuts, coconut, raisins, cherries, etc. (optional)
- Preheat oven to 325u0b0.
- Grease and flour one 10-cup tube pan or two large loaf pans.
- Sprinkle with cinnamon sugar.
- Pour batter into prepared pans and bake for 60 minutes.
- Cool 10 minutes. Remove from pan.
- This freezes well.
