Ham, Mushroom And Pea Tortellini
- 1 tablespoon vegetable oil
- 1 pound button mushrooms sliced
- 8 3/4 ounces ham chopped
- 1 1/4 cups heavy cream
- 1/2 cup milk
- 5 1/4 ounces frozen peas thawed
- 3 ounces Parmesan cheese shaved
- 3 spring onions thinly sliced
- 10 1/2 ounces tortellini fresh, cooked al dente
- Heat oil in a large frying pan over medium heat. Cook mushrooms for 4-5 mins, or until lightly browned. Set aside. Add ham and cook for 2 mins. Add cream and milk and stir until combined. Bring to a boil then add peas. Reduce heat and simmer, stirring occasionally, for 2 mins, or until sauce thickens. Return mushrooms to pan along with 1/2 the Parmesan, 1/2 the spring onions and hot pasta. Season.
- Transfer to serving bowls. Garnish with remaining Parmesan and spring onions. Serve immediately.
