Lemon Mascarpone Cardamom Bars

- 1/2 cup butter
- 2 cups sugar
- 2 eggs
- 4 cups all-purpose flour
- 1 1/2 cups almonds chopped
- 1 cup mascarpone
- 1 teaspoon cardamom
- 4 eggs beaten
- 1 1/3 cups sugar
- 3 tablespoons flour
- 2 tablespoons lemon zest
- 2/3 cup lemon juice
- 1/2 teaspoon lemon extract
- Preheat oven to 350 F and line a 13X9 inch pan with foil so that the foil spills over the sides.
- In stand mixer, cream butter and sugar. Then beat in eggs and flour.
- Stir in nuts. Set 2 cups mixture aside for topping. Pat mixture down and bake crust for 15 minutes.
- Whisk filling ingredients together, pour filling on crust and sprinkle reserved crust mixture on top.
- Lower oven tempature to 325 and bake for 30 minutes, or until a inserted knife comes out clean.
- Cut into desired size of bars.
