Coconut, Almond, And Chocolate Bites
- 1 3/4 cups coconut unsweetened, shredded
- 7 1/4 tablespoons sugar
- 2 egg whites
- almonds
- 1 7/8 tablespoons dark chocolate
- Preheat oven to 350 degrees Fahrenheit.
- Mix the coconut and the sugar.
- Add the egg whites and mix well.
- Spoon out 1/4 teaspoon coconut bites onto a baking pan lined with parchment paper.
- Flatten them slightly and form a cross on the top by pressing them lightly between the thumb and forefinger on each side. Gently push some almonds inside the bites, they should remain visible.
- Bake for 13 -14 minutes. Watch regularly to avoid burning the bottom.
- If they cook too fast, place a second baking pan below the pan with the bites
- Once cooked, cool on a biscuit grill.
- Melt the chocolate in a small saucepan, and dip the bottom of the bites in the chocolate. Place on a plate bottom side up to dry.
