Game Day Bratwurst-Cabbage Soup

  1. In a standard stock pot, saute bacon over medium-high heat.
  2. Once the fat has been rendered, add the onion and stir until tender.
  3. Stir in the garlic, cumin, caraway seeds, cayenne pepper and red pepper flakes.
  4. Add a generous splash of white wine to deglaze.
  5. Stir in the tomato and allow to cook for 1 to 2 minutes before pouring in the vegetable stock.
  6. Add the potatoes, parsnips, beans and cabbage.
  7. Toss in 2 bay leaves, and bring to a boil
  8. Allow soup to boil for approximately 5 minutes.
  9. Add the bratwurst slices, and simmer with the lid on for 1 hour.
