Burgers With Sweet Pepper Relish
- 2 yellow bell peppers or red, deseeded and cut into chunks
- 1 onion peeled and finely diced
- 1 red chili pepper deseeded and chopped finely
- 1/4 cup white wine vinegar
- 1 cup orange juice
- 1 teaspoon mustard seeds
- 14 ounces corn drained
- 2 tablespoons apricot jam
- 3 tablespoons tomato ketchup
- 1/2 bunch cilantro chopped coarsely
- 1 1/2 pounds ground beef
- 1 egg
- 2 tomatoes sliced
- 1/2 romaine lettuce
- 4 hamburger buns cut in half
- For the relish, bring the peppers, onion, chili pepper, vinegar and orange juice to a boil in a saucepan. Season to taste and add the mustard seeds. Simmer over medium heat 25 mins. Add the corn. Season with jam and ketchup and set aside to cool. Stir in the chopped cilantro.
- Preheat grill. For the burgers, mix the beef with the egg and season to taste. Knead well and shape into 4 burgers. Grill 5 mins each side, or until cooked as desired.
- Toast buns on grill, 1 min each side. Fill with the lettuce, burgers and tomato slices. Add a dollop of relish to each and serve with the rest of the relish in a bowl.
