Fake Duck Rice

  1. In a saucepan, saute the onion in a drizzle of olive oil.
  2. Add 1 chopped garlic clove, and the bay leaf.
  3. Let the onions caramelize for 1 to 2 minutes, and add the tomato.
  4. Add the carrot, and half of the smoked sausage.
  5. Simmer for about 10 minutes, until the onion is soft and the tomato has fallen apart.
  6. Add the wine.
  7. Shred the chicken, and add to the stew, stirring well to mix in.
  8. Add half a cup of chicken broth, and season with salt and pepper.
  9. Let it simmer to reduce the sauce.
  10. Preheat oven to 180 degrees Celsius.
  11. In another saucepan, saute 1 garlic clove in a drizzle of olive oil. Let the garlic fry until releasing some aroma.
  12. Add the rice, and fry for about 2 minutes, stirring occasionally to prevent burning.
  13. Add 3 cups of hot chicken broth, and stir.
  14. Season with salt and let the rice cook.
  15. Add the cooked rice to the chicken, and mix carefully. Pour the rice and chicken into a baking tray.
  16. Garnish with slices of smoked sausage, and bake until browned on top.
