Chunky Beef, Bean And Broccoli Soup

  1. Heat the oil in a large saucepan on high heat. Add beef and cook, stirring, 2-3 mins or until browned. Remove from pan.
  2. Add onion and bacon to the pan and saute 2-3 mins. Add garlic and saute 1 min. Return beef to the pan. Add stock, tomatoes and oregano and bring to a boil. Reduce heat to low; cover and simmer 1 hour or until beef is tender.
  3. Add broccoli and beans to the pan. Simmer 4-5 mins or until broccoli is tender. Season to taste. Sprinkle with basil and Parmesan cheese.
