Lamb And Broccoli Stir Fry
- 2 tablespoons peanut oil
- 1 pound lamb loin trimmed, thinly sliced
- 1 onion thinly sliced
- 2 teaspoons ginger finely grated
- 9 ounces Chinese broccoli chopped
- 1/4 cup oyster sauce
- 2 tablespoons soy sauce
- 2 tablespoons dry sherry
- 2 teaspoons brown sugar
- steamed rice to serve
- Heat 1 tbsp oil in a wok or large frying pan over high heat. Working in batches, stir-fry lamb for 2-3 mins, until browned. Remove from wok and cover to keep warm.
- Add remaining oil to wok. Stir-fry onion and ginger for 2-3 mins, until softened. Add broccoli and cook for 1-2 mins, until just tender. Combine oyster sauce, soy sauce, sherry and sugar then add to pan along with lamb. Cook for 1-2 mins, until heated through. Serve with steamed rice.
