Chinese Sunday Pork
- 1 (20 oz.) can pineapple chunks
- 3 Tbsp. soy sauce
- 1 tsp. cornstarch
- 1 tsp. vinegar
- 1/4 tsp. hot pepper
- 1 lb. boneless pork butt
- 2 Tbsp. vegetable oil
- 1 tsp. ground ginger
- 1 onion, quartered
- 2 medium carrots, slivered and cut into strips
- 1 green bell pepper, chopped
- some garlic powder
- Drain pineapple, saving 3 tablespoons juice.
- Mix juice with 1/2 cup water, soy sauce, cornstarch, vinegar and pepper.
- Set aside.
- Cut pork into strips and brown pork in hot oil.
- Add garlic and ginger.
- Cook 1 minute.
- Add onion and carrots.
- Cook 1 minute.
- Stir sauce.
- Add to skillet with pineapple and peppers. Cook until sauce thickens.
