Elley'S Chocolate Orange Cheesecake Brownie
- brownie Mixture ---
- 7 tablespoons butter
- 1 3/16 cups dark chocolate
- 7/8 cup milk chocolate
- 3 eggs
- 1 9/16 cups caster sugar
- 5 7/16 tablespoons light brown sugar
- 7/8 cup flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- cheesecake Mixture ---
- 1 1/16 cups cream cheese
- 6 2/3 tablespoons caster sugar
- 1 Orange
- 1/2 orange
- 1 teaspoon cornflour
- 1 egg
- Butter and line a 23cm square baking tin then Preheat the oven to 180C
- Chop 150g of milk chocolate into chips and set aside
- Coarsely chop 250g of dark chocolate
- Melt the dark chocolate and 100g of butter together in a water bath then set aside to cool
- Whisk 250g of cream cheese with 50g of caster sugar together in a medium bowl until creamy
- Add in zest of 1 orange + juice of 1/2 orange and 1tsp cornflour followed by 1 egg. Whisk until blended then set aside
- In a large bowl beat 3 eggs and 190g caster sugar + 75g light brown sugar in large bowl until creamy
- Add in 1/4 tsp salt and the melted chocolate mixture followed by 1tsp vanilla
- Gradually add in 112g of flour
- The stir in the milk chocolate chips
- Pour 3/4 of the brownie mixture into the baking tin
- Drop dollops of the cheesecake mixture over the brownie mixture followed by the remaining 1/4 brownie mixture and swirl together using a knife to create a marbled effect
- Bake for 25 - 30 mins until slightly risen around the edges and set in the centre
- Cool completely in the tin then carefully remove and cut into squares
