Fresh Tomatos With Grilled Veggies And Spaghetti
- 6 tomatoes vine ripe, - quartered
- 4 cloves garlic - chopped
- 1 red onion small, - chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper
- 1/4 teaspoon dried oregano
- 2 tablespoons olive oil
- grated romano cheese Fresh
- 1 pound spaghetti your favorite
- 2 zucchini - sliced
- 1 red onion - sliced
- 10 baby carrots - sliced
- 3 cloves garlic
- 2 tablespoons olive oil
- Heat a large cast iron frying pan with the olive oil. Add the chopped garlic and onion to saute for a minute or two. Add the tomatoes and the seasoning and simmer on low while you grill the veggies.
- Heat a griddle or large cast iron frying pan with the olive oil. Place the sliced zucchini on the griddle and grill on one side until slightly golden. Flip and grill on the other side.
- Place the onions, garlic and carrots to grill.
- Place the grilled veggies in with the tomatoes.
- Cook the spaghetti as directed. Lift out of the water into the pan with the tomatoes and veggies. Drizzle a little extra olive oil over the spaghetti. Grate the Romano cheese and add a little extra red pepper flakes. Toss and serve.
