Passion Fruit Pudding
- 1/2 cup granulated sugar
- 1 tablespoon powdered gelatin
- 2/3 cup cold water
- 2 tablespoons all-purpose flour
- 2 ounces mango juice
- 10 ounces passion fruit pulp
- whipped cream to serve
- 4 mango slices, chopped, to serve
- 4 fresh mint leaves to serve
- Place 6 serving glasses (13.5 oz each) on a baking tray. Combine sugar, bloomed gelatin (with liquid) and flour. Cook, stirring, over low heat for 2 mins, or until sugar dissolves. Increase heat to medium, bring to a boil and cook for 1 min or until thickened slightly. Remove from heat, add mango juice and passion fruit pulp. Chill for 30 mins or until mixture starts to set.
- Whisk chilled passion fruit mixture for 8-10 mins, or until thick and creamy. Transfer to prepared glasses and chill for 4 hours or until set. Serve topped with whipped cream, mango and mint leaves.
