Savory Baklava With Carrots, Feta, Almonds And Mint
- 9 1/16 cups carrots
- 2 tablespoons olive oil
- 1 onion cut into small pieces
- 3 teaspoons ground cinnamon
- 1 lemon
- 10 mint leaves finely chopped
- 4 1/4 tablespoons raisins
- 9 frozen philo sheets
- 4 1/4 tablespoons melted butter
- 5/8 cup almonds coarsely chopped
- 1 2/3 cups feta cheese
- Peel the carrots and slice them very thinly.
- In a medium pan, heat the olive oil and cook the onion over low heat for about 15 minutes. Add the carrots, cinnamon, lemon zest and lemon juice.
- Mix, add 500 ml of water and season with salt.
- Cover and cook until the liquid as evaporated and carrots are tender, about 25 minutes.
- Remove from heat and add mint and raisins.
- Preheat oven to 180 degrees Celsius.
- Brush philo sheets with melted butter.
- Arrange 3 sheets in a square baking dish.
- Top with half of the carrots, sprinkle with crumbled feta and half of the almonds.
- Repeat the layers 1 more time, and finish with 3 buttered philo sheets.
- Bake for about 30-35 minutes until golden brown.
