Savory Baklava With Carrots, Feta, Almonds And Mint

  1. Peel the carrots and slice them very thinly.
  2. In a medium pan, heat the olive oil and cook the onion over low heat for about 15 minutes. Add the carrots, cinnamon, lemon zest and lemon juice.
  3. Mix, add 500 ml of water and season with salt.
  4. Cover and cook until the liquid as evaporated and carrots are tender, about 25 minutes.
  5. Remove from heat and add mint and raisins.
  6. Preheat oven to 180 degrees Celsius.
  7. Brush philo sheets with melted butter.
  8. Arrange 3 sheets in a square baking dish.
  9. Top with half of the carrots, sprinkle with crumbled feta and half of the almonds.
  10. Repeat the layers 1 more time, and finish with 3 buttered philo sheets.
  11. Bake for about 30-35 minutes until golden brown.
