Whole Wheat Sweet Potato Gnocchi In A Warm Rosemary Brown Butter Sauce
- 1 pound gnocchi Gia Russa Whole Wheat, made with Sweet Potatoes
- 4 cups water
- 1 dash salt
- 2 tablespoons vegan butter I use Earth Balance
- 1/2 tablespoon rosemary freshly chopped
- 1 tablespoon unsalted sunflower seeds
- 1/3 cup sweet onion thinly sliced
- 1) Begin by bringing a pot of salted water to a boil over medium high heat,once water boils add gnocchi and cook for 2-3 minutes or until gnocchi floats to the top of the pot, drain and set aside
- 2)In a saute pan begin your sauce, add in vegan butter over medium heat, make sure butter is completely melted before adding in onions
- 3) Once butter has a nutty aroma and onions are softened add in rosemary and sunflower seeds, let toast for 1 minute
- 4) Add gnocchi to the saute pan and toss with the brown butter sauce
- 5) Dish out gnocchi and serve warm!
