Banana Bran Bread
- 2 eggs, beaten
- 2 c. mashed ripe bananas (about 4 large)
- 1/2 c. chopped walnuts (optional)
- 1/3 c. vegetable oil
- 1 tsp. vanilla extract
- 1 1/2 c. Raisin Bran cereal
- 2 1/2 c. all-purpose flour
- 3/4 c. sugar
- 2 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- Preheat oven to 350u0b0.
- Grease a 9 x 5 x 3-inch loaf pan.
- In medium bowl, combine eggs, bananas, nuts, oil and vanilla.
- Stir in cereal.
- Let stand 10 minutes.
- Stir to break up cereal.
- In a large bowl, combine the flour, sugar, baking powder, baking soda and salt.
- Add banana mixture to flour mixture, stirring just until moistened.
- Pour into prepared pan.
- Bake 60 to 65 minutes or until tester inserted in center comes out clean.
- Cool 15 minutes before removing from pan.
