Turkey Meatball Stew
- 1 pound ground turkey
- 2 cloves minced garlic
- 3/4 cup seasoned bread crumbs or plain
- 3/4 cup grated cheese
- 1 teaspoon salt
- 1 egg slightly beaten
- 1 teaspoon dried parsley
- 1/2 cup chicken broth
- Mix the above with hands or large spoon and divide and shape into 1 inch balls. Place in preheated oven 400 degrees and bake 10 minutes or until slightly browned.
- Add a small amount of olive or canola oil in a large Dutch oven.. Add minced garlic, 1 cut up potato and 1/2 cup cut green beans. Saute for a few minutes or until veggies start to cook. Add 2 large cans crushed tomatoes, a pinch of salt and pepper and meatballs. Transfer to crockpot and cook on low approx. 4 to 5 hours.
- You can also do the above on the stove top and it should be ready in 1 1/2 hours. Serve with fresh bread.
