Chai Panna Cotta And Florentine Cookies
- 1/2 cup whole milk
- 1 teaspoon chai tea
- 1/2 teaspoon gelatin
- 1 1/2 cups whipping cream
- 1/8 cup sugar
- 1/2 tablespoon sugar
- 1 pinch salt
- 2 1/4 cups butter
- 2/3 cup oatmeal
- 1/3 cup sugar
- 4 1/8 tablespoons flour
- 1 3/8 tablespoons corn syrup
- 1 3/8 tablespoons whole milk
- 1/3 teaspoon vanilla
- 1 pinch salt
- Panna Cotta
- Bring the milk to a boil in a saucepan and add the chai tea. Place in a bowl covered with plastic wrap and refrigerate for 48 hours.
- Place the milk mixture into a heavy saucepan and sprinkle the gelatin over it. Let sit for 5 minutes. Heat until the mixture is warm, but do not allow to boil, approximately 3 or 4 minutes.
- When the gelatin has dissolved, stir in the cream, honey, sugar, and salt. Cook on medium-low heat until the sugar is dissolved, but without allowing the mixture to come to a boil, approximately 5 minutes.
- Let cool 10 minutes, place into ramekins or serving dishes and refrigerate for at least 6 hours.
- Cookies
- Preheat the oven to 190 Celsius.
- Melt the butter and set aside. When tepid, add the oatmeal, sugar, flour, corn syrup, milk, vanilla, and salt. Mix well.
- Drop spoonfuls of dough onto a silicone baking mat 3 centimeters apart, pressing each lightly with the hand to slightly flatten.
- Bae for 6-8 minutes until golden. Let cool completely before serving.
