Steak Sandwich With Pepper Relish
- 2 red peppers seeded and chopped
- 3/4 cup brown sugar packed
- 1 cup cider vinegar
- 1 tablespoon ginger grated
- 1/2 teaspoon red pepper flakes optional
- 1 clove garlic crushed
- 4 rib eye steaks thin, 3 oz each
- 2 tablespoons butter
- 2 teaspoons olive oil
- 2 onions thinly sliced
- 2 plum tomatoes thinly sliced
- 4 slices prosciutto
- 4 pieces flatbread split and toasted
- 2 ounces mixed salad greens
- For the pepper relish, place all ingredients in a medium saucepan on high heat. Bring to a boil. Reduce heat to low and simmer 25-30 mins, until mixture is syrupy.
- Season steaks. Heat butter and oil in a large skillet on high heat. Saute onions 2-3 mins, until beginning to caramelize. Add tomatoes, cook 1-2 min each side. Fry prosciutto until crisp. Remove from skillet. Keep warm.
- Cook steaks in same skillet 3-4 mins each side, or until cooked to desired doneness.
- Serve steaks on flatbread with tomatoes, onions, steak, prosciutto and relish.
