Green Peppers With Onion And Grilled Panela Cheese

  1. Heat the oil in a large skillet. Saute the pepper and onion on medium heat, stirring from time to time until the onion begins to brown, approximately 3 or 4 minutes.
  2. Add the vinegar, basil, salt, and pepper, and cook for 1 minute.
  3. Add the tomato and a little water, cover the skillet and cook on low heat for 4 minutes, until the vegetables are tender.
  4. Separately, spritz a skillet with cooking spray and grill the cheese until slightly golden. Serve along with the cooked vegetables.
