Pineapple And Prawn Noodles With Chili Lime Dressing
- 8 3/4 ounces rice noodles soaked in boiling water for 5-8 mins then drained
- 1 pound prawns cooked, peeled and deveined
- 1/2 fresh pineapple peeled, cored and chopped
- 4 ounces cherry tomatoes halved
- 2 tablespoons cilantro leaves fresh, roughly chopped + extra, to garnish
- 3 spring onions trimmed and sliced
- 1/4 cup lime juice
- 2 tablespoons sweet chili sauce
- 1 tablespoon sesame oil
- 2 teaspoons fish sauce
- 2 teaspoons brown sugar
- 2 cloves garlic peeled and minced
- 1 red chili deseeded and sliced
- 1 teaspoon fresh ginger finely grated
- Combine noodles, prawns, pineapple, tomatoes, cilantro and spring onions.
- Whisk together remaining ingredients then toss with noodle mixture and garnish with extra cilantro leaves.
