Chicken Breast With Tomato Salad
- 3 tablespoons canola oil
- 3 tablespoons hot sauce
- 1 tablespoon sugar
- 4 tablespoons red wine vinegar
- 1 onion peeled and diced
- 3 ounces peppers pickled, sliced
- 1 2/3 pounds tomatoes diced
- 4 chicken breasts
- 1 avocado ripe, peeled, halved, pitted and cut into wedges
- 4 ounces gouda cheese coarsely grated
- Combine 1 tbsp oil, hot sauce, sugar, vinegar and 2 tbsp onion, 2 tbsp pepper and 2 tbsp tomato. Add chicken and marinate for at least 1 hour.
- Preheat broiler. Heat remaining oil in a frying pan and sear chicken breasts for 10 mins, turning as necessary. Place in a baking pan and top with avocado slices and grated cheese. Broil for 5 mins. Serve chicken with remaining tomatoes, peppers and onions.
