Broccoli Rabe With Sausage Pizza

  1. Thinly slice portabelo mushrooms and saute in a medium to large skillet on medium low heat in 2 tablespoons of olive oil. Add salt and fresh ground black pepper to taste. Saute until mushrooms become tender. Transfer to small bowl.
  2. Blanche brocoli rabe whole, drain cool and chop. In a small skillet add chopped garlic, 2 tbsp olive oil and broccoli rabe and saute. Transfer to a small bowl
  3. Place 14 inch round parchment paper on pizza peel.
  4. Stretch the dough and place on parchment paper.
  5. Evenly spread portabela mushrooms over dough.
  6. Tear your sliced mozzarella into small pieces and place around the mushrooms but do not cover them.
  7. Spread broccoli rabe and garlic mixture evenly on pizza.
  8. Sprinkle with romano cheese.
  9. Sprinkle red pepper if desired.
  10. Insert into preheated oven. Average cook time 8 mins with pizza dome, much longer without.
