No Cholesterol Fudge Cake

  1. Spray a 9-inch spring-form pan with nonstick vegetable cooking spray.
  2. In large bowl, combine flour, sugar, cocoa, baking powder, baking soda and salt; mix well.
  3. Add remaining ingredients except chocolate chips and raisins.
  4. Beat at high speed 2 minutes. Batter will be very thin.
  5. Pour batter into pan.
  6. Sprinkle chocolate chips and raisins over top.
  7. Bake at 325u0b0 until top of cake is firm to touch, 50 to 60 minutes.
  8. Cool at least 30 minutes.
  9. Loosen edges of cake with knife before removing from pan.
  10. Cover to keep moist.
