No Cholesterol Fudge Cake
- 1 3/4 c. flour
- 1 1/2 c. sugar
- 3/4 c. cocoa powder
- 1 1/2 tsp. baking soda
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 4 egg whites
- 2/3 c. skim milk
- 1/3 c. almond flavored liqueur (such as Amaretto)
- 1/2 c. applesauce
- 2 tsp. vanilla
- 3/4 c. boiling water
- 1/4 c. mini chocolate chips (2 oz.)
- 1/2 c. raisins
- Spray a 9-inch spring-form pan with nonstick vegetable cooking spray.
- In large bowl, combine flour, sugar, cocoa, baking powder, baking soda and salt; mix well.
- Add remaining ingredients except chocolate chips and raisins.
- Beat at high speed 2 minutes. Batter will be very thin.
- Pour batter into pan.
- Sprinkle chocolate chips and raisins over top.
- Bake at 325u0b0 until top of cake is firm to touch, 50 to 60 minutes.
- Cool at least 30 minutes.
- Loosen edges of cake with knife before removing from pan.
- Cover to keep moist.
