Chicken Fillet Pittas
- 400 grams chicken tenderloins
- 1 garlic clove finely chopped
- 1 tablespoon soy sauce
- olive oil spray
- 3 pita breads large
- 2 cups romaine lettuce
- 2 small tomatoes cut into wedges
- 1 onion small, thinly sliced
- cheese your choice, I use Greek yellow cheese Kaseri
- Combine the chicken tenderloins, garlic, soy sauce in a bowl and stir well to coat.
- Preheat a large frypan over medium heat. Spray the chicken with a little oil and cook, for 2 minutes each side or until lightly charred and cooked through.
- Place the cheese on top of pitta bread, along with onion rings, tomato, lettuce and chicken fillet. Top with a pitta bread. Repeat with the remaining ingredients , and top with the third pitta bread.
- Set pita into saute pan, cook until lightly browned, turn over and cook again.
- Cut in half and serve warm. Enjoy!!
