Cocoa Pear King Cake
- 2 puff pastry sheets
- custard amounts halved
- 2 3/8 tablespoons sugar
- 11/16 cup almond powderr
- 4 15/16 tablespoons butter soft, cut into pieces
- 1 tablespoon flour
- 2 tablespoons cocoa powder
- 2 eggs
- 1 egg yolk
- 1/2 pear in syrup, diced
- Preheat oven to 425 degrees Fahrenheit.
- Prepare the pastry cream as shown here. Reserve in the refrigerator.
- In a bowl, mix the almond powder, flour, sugar, and cocoa; then the butter and eggs with a spoon. Add custard to preparation.
- Place a puff pastry on a baking tray lined with baking paper. Pour the mixture onto the pastry making sure to leave a border of about 3 cm. Slightly wet the rim. Cover with the second puff pastry and press the edges of the two layers together. If necessary, cut off excess dough. Brush the wafer with the egg yolk diluted in a little bit of water. Slit the pastry slightly without piercing, and bake for 25-30 minutes.
