Philly Steak Benny

  1. In a small sauce pan, heat the olive oil and add the flour and stir until you have a smooth paste. Add milk whisking until the flour mixture is entirely incorporated and the milk begins to thicken. Add cheddar cheese, salt and smoked paprika. Whisk well until smooth. Keep warm.
  2. Poach eggs (3 minutes in boiling water, 30 seconds in the water, but remove from heat, drain).
  3. While eggs are poaching, toast English muffins.
  4. Put one poached egg on a muffin half, top with hot meat component and drizzle with the cheese sauce. Serve immediately.
