Balsamic Grilled Peaches
- 1/2 cup wish-bone balsamic vinaigrette dressing
- 4 peaches large ripe, cut in half and pitted
- 1 tablespoon oil
- 1 head butter lettuce small head, washed, dried well, and separated
- 1 ounce fresh mozzarella cheese drained and cut into 1/2-inch pieces, at room temperature
- 2 1/2 tablespoons sunflower seeds lightly toasted
- Arrange the peach halves in a single layer on a sheet pan. Brush the cut side of the peaches with 4 tablespoons of the dressing. Grill or broil the peaches for 3-5 minutes or until they have softened and are golden.
- Divide the lettuce evenly between four serving plates. Top each of the plates with two peach halves and some of the cheese. Drizzle each of the salads with the remaining dressing.
- Garnish with the sunflower seeds and serve immediately.
